Asian prawn skewers

INGREDIENTS
- 16 large prawns (gambas)
- 2 tbsp of nuoc-mam sauce (vietnamese fish sauce)
- 1 tbsp lime juice
- 1 tbsp brown sugar
- 1 crushed garlic clove
- 1 red pepper seeded and thinly sliced
- 1 green pepper seeded and thinly sliced
- 1 onion cut into thin slices
- 1 bowl of soy bean sprouts
- 2 sprigs of mint, stripped
- 2 stems of coriander stripped
- 1 tsp sesame oil
- 4 tbsp coarsly chopped cashews
- Salt and pepper
INSTRUCTIONS
1. Remove the shell from the prawns before threading each one on a skewer, lengthwise.
2. In a bowl, mix the nuoc-mam sauce, lime juice, brown sugar garlic clove and add salt and add salt and pepper.
3. Reserve half of the sauce ; brush the prawns with the other half, then cook them on the plancha over high heat for 2 to 3 mns, flipping them regularly, then set them aside.
4. Place the peppers, onion and soy beans sprouts on the plancha and cook for 3 to 4 mns, mixing them, then add 2 tablespoons of sauce on top and cook for one more minute.
5. Arrange the vegetables on each plate, add four prawns skewers, add a drizzle of sesame oil and sprinkle with cashews, mint and coriander leaves.
